The Easy Salmon Dinner My 6-Year-Old Actually Asks For

There are certain dinners that feel like a major parenting win, and any meal that gets my 6-year-old to ask for salmon definitely falls into that category.

This Herby Dill Salmon & Asparagus has become one of those recipes in our house. It tastes like something that took a lot of planning and effort, but in reality, it takes me about 10 minutes to get everything ready and into the oven. Which, on a busy weeknight, is exactly the kind of recipe I need.

The Secret Is Our Garden Ranch Seasoning Mix

 

The thing that makes this salmon so good is the creamy herb topping.

I mix mayonnaise with fresh lemon juice and our Primal Palate Organic Garden Ranch Seasoning Mix, then spread it over the salmon before it goes into the oven.

Our Garden Ranch packet has all of those classic ranch flavors already built in, so instead of measuring out a bunch of individual herbs and spices, you can open one packet and you're basically done.

It gives the salmon this creamy, herby, dill-forward flavor that works so well with the fresh lemon.

A Full Dinner on One Pan

I love a recipe that doesn't leave my kitchen looking like a tornado came through after dinner, because with the kids toys, our house looks like a Target and Walmart tornado blew through every single day. 

For this one, the salmon and asparagus cook together on the same sheet pan. While they're in the oven, I make some rice to serve alongside them.

That's it. If you don't want to eat rice, potatoes are a great substitution for this meal, and when I'm craving more veggies, I'll throw together a quick salad to enjoy along with it. 

Easy Enough for a Weeknight, Nice Enough for Company

This is also one of those recipes I love because it doesn't really look like a 10-minute-prep dinner.

The creamy herb-crusted salmon with roasted asparagus feels a little special, and I often serve this to friends or family. Everyone loves this dish, and I love to share how easy it is to make!
